GREENS MAC & CHEESE
Give your Mac & Cheese a macro-friendly makeover. Arguably one of the best comfort foods Mac & Cheese is a great simple dinner option, that can be packed up and used for lunches too. Well, we’ve gone a made it even better with our new Greens Mac & Cheese, using Eatlean Tasty and blending in some leek, broccoli, and spinach to create a mouthwateringly fresh and healthy dinner recipe the whole family will love!
1 Mac & Cheese Bowl
450g Dried Macaroni
400g Tenderstem Broccoli
40g Lighter Butter/Margarine
3 Cloves of Garlic
2 tbsp Plain Flour
1 Litre Skimmed Milk
100g Baby Spinach
50g Flaked Almonds (optional)
Prep the leek and remove the broccoli florets (save for letter) and finely slice the leeks & stems together
Add the veg to a large pan over a medium heat, along with the crushed garlic cloves and butter and cook until softened.
Add the flour and the milk and simmer for 10 mins or so until the sauce has thickened
In a separate pan, par cook the macaroni lightly – 5 mins only
Grate the Eatlean Tasty cheese and stir in most of it followed by the spinach
Using a hand blender lightly blitz the mixture – to a texture of your choice
Add the broccoli florets and the cooked pasta and season well
Add the mixture to an oven proof dish and top with the remaining Tasty cheese and almonds (optional)
Bake for 20 mins or so until bubbling!
